The giant grouper, sometimes known as the 'long dan,' is a deep sea fish found in the waters near Malaysia and Indonesia. It can reach a weight of 400kg. The fish is appreciated in Asian cuisines for its thick chewy skin and delicious meat.
Skilled chefs use every part of the fish, including the scales and eyeballs, to create distinctive meals. If we're lucky, we may occasionally locate this in the wet market, and it's rather impressive.
